Delightful Cakes Recipes

Banana Cake


Ingredients:
2 cups maida
2 eggs

½ cup butter

1 ¼ cups sugar
¼ cup buttermilk
3 green bananas
1 tsp baking soda
¾ tsp baking powder
1 tsp vanilla essence
¼ tsp salt
½ cup nuts

Method:
First sieve the maida, baking powder and baking soda. Add salt to this and keep it aside.
Now put all the other ingredients in the mixie one by one, starting with the butter and sugar.
When the butter and sugar get creamy, add the eggs, buttermilk, vanilla essence and the chopped bananas.
Run the mixie until you get a smooth mixture with no lumps.
Now add it to the sieved maida in a vessel. Fold the mixture and the maida well.
Now pour the batter into a greased and powdered cake tin (8"x8") and sprinkle the chopped nuts on top.
Bake for 35 minutes at 200ºC. Cool and cut.

Cashew Cake

Ingredients:
1 cup cashew
2 cups sugar

¼ cup milk
¼ cup ghee
A few strands of saffron

Method:
Soak the cashew in cold water for
about 2 hours.
Grind it to make a smooth paste.
Now soak the saffron in milk and set aside.
Take heavy bottom vessel. Put the cashew paste,sugar and ghee.
Keep stirring continuously on low heat for about 10 minutes.
Now regulate your stove to medium and keep stirring till cashew cake leaves ends of the vessel.
Before pouring into greaced plate.
Pour saffron and milk and mix it well.
Pour and cut into diamond shapes when warm.

Coconut Cake

Ingredients:

6 oz. flour
3 oz. butter

4 oz. castor sugar
a little milk

2 small eggs
3 oz. desiccated coconut
1 small tspful baking powder

Method:
Cream the butter and sugar, and add the beaten eggs gradually.
Then add the flour, baking powder and the coconut and, lastly, a little milk.
Put the mixture into a prepared cake tin and bake in a moderate oven for about 1 1/4 hours.

Eggless Cake

Ingredients:
8 oz. plain flour
3 oz. margarine

pinch of salt
4 tspful baking powder
3 oz. sugar
1 tsp vanilla essence
about 1/2 cup milk and water

Method:
Mix flour, baking powder and salt.
Mix in the margarine, add the sugar and vanilla and mix to a dropping consistency with the milk and water.

Turn into a greased 7 inch tin and bake in a moderate oven for 3/4 to 1 hour.

Suger Less Cake

Ingredients:
1 tsp cinnamon
2 cup water

1/2 cup shortening
1 1/2 tsp vanilla extract
1/2 tsp salt
1 tsp baking soda
1 1/2 tsp artificial sweetener
1 cup rolled oats
1 beaten egg
1 cup raisins
1 cup flour

Method:
In a sauce pan add together raisins, water and cinnamon.
Heat the sauce pan on low heat for fifteen minutes.
Take off from fire and let it cool.
To this mixture add the beaten egg, oats, artificial sweeter, shortening and vanilla extract.
In a separate bowl sift together flour, baking soda, cinnamon powder and salt.
Add this dry ingredients to the earlier prepare batter and mix well.
Pour this mixture in a baking pan and bake for 30-35 minutes at 350 degrees F.
When the cake is ready let it cool for 10 – 15 minutes and then serve.

Chocolate Trifle

Ingredients:

1 package brownie mix
1 package instant chocolate pudding mix
1/2 cup water
1 can sweetened condensed milk
1 container frozen whipped topping, thawed
1 container frozen whipped topping, thawed1 bar chocolate candy

Method:
Prepare brownie mix according to package directions and cool completely. Cut into 1 inch squares.

In a large bowl, combine pudding mix, water and sweetened condensed milk. Mix until smooth, then fold in 8 ounces whipped topping until no streaks remain.

In a trifle bowl or glass serving dish, place half of the brownies, half of the pudding mixture and half of the 12 ounce container of whipped topping. Repeat layers. Shave chocolate onto top layer for garnish. Refrigerate 8 hours before serving.

Rainbow Cake

Ingredients:
1 cup butter
1 ¾ cups sugar
3 cups flour

5 eggs
1 ½ tsp baking powder

½ tsp soda bi carbonate
1 cup milk
1 tsp food colours
1 tsp rose essence
1 tsp pineapple essence
1 tsp strawberry essence

Method:
Sieve the flour,baking powder and soda bi carbonate.
Cream the butter and sugar.
Add the eggs slowly and mix.
Add the flour,milk and make it into a smooth paste.
Divide the batter into three equal parts. To one part,add 1 tsp green colour and rose essence.
To the second part,add 1 tsp yellow colour and pineapple essence.
To the third part,add 1 tsp red colour and strawberry essence.
Pour green colour in the bottom,red colour in the middle and yellow colour in the top.
Bake for 45 minutes and serve after cooling.
